What art schools are looking at in a portfolio is samples of your work. They want to see your creativity. They also want to see if you have a particular style or theme. If you have a theme, great, select the pieces that show if. If you are fresh into art, and haven't found a style/theme yet, just show your strongest work.

Photography is easy. Keep a portfolio of what you think are your best prints.
Interior Design, they will want pictures and blueprints/sketches of your ideas, since you can't show them the actual pieces.
Film school, I can't comment on. Perhaps some clips from some of your films?

Any type of 3 dimensional art, a portfolio usually consists of high quality slides of about 20-30 of your strongest pieces.
This will work also for 2 d works.
Keep them in some sort of organized binder/portfolio holder. There are many different types, and the photo portfolio will of course be different than the Interior Design type.
Good Luck
