I hear the Vistor center is closed. What can you do there?

You are correct...the dinosaur quarry visitors center is closed due to much needed repairs. However...there is still a lot of cool stuff to do there.
You can camp, hike, raft, or take a guided ranger tour.
There are two "districts" to the monument - the quarry district and the canyon district. The Canyon district has some fantastic scenery and you can drive (with an appropriate vehicle) down to the Green and Yampa Rivers (Echo Park).
There is a temporary visitors center open as well near the quarry. There is also a Canyon area visitors center. On the NPS web site for Dinosaur (see below) there is a virtual tour of the quarry, so you can see all the bones.
