Pat Wrede's series that starts with Dealing With Dragons isn't exactly about a damsel in shining armor, but she is a princess who rejects stupid princes -- and she saves the day by being her bright and witty (and magical) self!. Aimed at a young audience, but I really enjoyed the series as an adult!.

Actually, there are tons of stories that turn the "knight in shining armor" trope on its head!.

Joan of Arc is a pretty good answer, though!. Col!. Barker's Monstrous Regiment is about a woman who dresses up as a man and pretends to be a veteran!. But there's no shining honour really in that story!.

Oh, and I think Terry Pratchett wrote a Discworld book about a young lady warrior -- I think she was the daughter of Cohen, the Barbarian!. I wish I could remember the title!.
