Yes, this is a tricky thing to do in photoshop!. A lot of people think it is just clicking on grayscale, and wah la! But no, when you go to grayscale you typically get a lot of grays!.!.!. not a lot of pure whites and blacks!. There are a couple of suggestion I can give you!.

First of all, you don't have to turn your photos into grayscale to get them B&W!. You can also just desaturate them!. You can do this in image>adjustments>Desaturate!. Then you would want to go into image>adjustments>selective color and only use the whites, blacks and neutrals!. Example - for the whites take the black slider and move it to the left until you like how it looks!. Do the same thing with the blacks and neutrals only move the black slider to the right!. Another option is to use levels or curves!. Levels is easier !.!.!.!. and you would move the left hand slider to the R to get it darker / more blacks, you would move the middle slider to the L to get more whites / brighter and move the right slider to the L to get more contrast overall!. On the curves, it is whiter at the top of the line, and blacker at the bottom!. So you can create two points - one at the top and raise the line up and to the left!. Create another point on the bottom and drag that line down and to the right!.

I know these may seem tricky at first, but once you get a better grasp of using them, it will be a piece of cake!.
