There are different ways to do this!. Here is how I do it:

First!. I always make a copy of the background to work with!.
Now switch to quick mask mode at the bottom of the tools pallete on the left side!.
Use the paint brush to carefully color in the part of the picture you want to take to the new background!. Zoom in and make sure you get the edges perfect!. You can use the eraser if you go "over the lines"!.
Switch back out of quick mask!.
Invert the selection!.
Copy!.
Open the new background you wanted your pic in!.
Paste!.
Move the pic to where you want it in the background!.
You may need to adjust the lighting depending on the background you are using to blend it better!. You can add lighting by using:
filters > render > lighting effects

The more you practice and do it, the better you will get!.
