Uta Hagen has written a couple that are excellent, as are the books already mentioned!. There's one that I'm very fond of by Cicely Berry who was the vocal coach for the RSC called The Actor and the Text!. John Gielgud wrote one called Acting Shakespeare that is good!. Michael Redgrave wrote a great memoir called In My Mind's Eye, and there's a fascinating book called Letters from an Actor by William Redfield that is about the famous Richard Burton Hamlet that is fun reading!.
