Your description of #1 is more full, more alive, and more detailed than that of # 2. Through your mind and description I like #1 better, and besides he can be funny and delightful, whereas #2 seems like a a bit of a bore.

i would definitely think the first because colleges want their applicants to stand out. especially in theatre and performing arts. it doesn't matter if you can understand the person perfectly, if you fall asleep during the performance, they're not going to leave a good impression.

Overacting? While it's good to invest yourself in a part, overacting is a sign of insecurity and it often means the actor is unwilling to let the audience see a more vulnerable moment. There is value in subtlety. Committing and overacting are two different things. But you'll learn about that once you get into your university theatre. :)

Be genuine and open to any suggestions they give you. It's so important. Universities know that you don't know everything about acting. If you did, you wouldn't need to attend their school. But they DO want to know if you'll be pleasant to work with.

And yes, being remembered is important. If the first option is what you think will get you remembered, go for it. In acting, it's much better to put yourself out completely than to hold back and "be safe." Judging by how differently you express either option, I think you already know your answer.

Anyway, I'll step down from my soap box and let you get on with thinking about your application process. Good luck!
