symbolism is typically hard to discern, but usually if there's emphasis on something that seems a bit irrelevant, or any emphasis on an object, then you're probably looking at something symbolic!.

As for a major shift, you want to look for a change in subject!.
they're walking on the beach, and the speaker is describing the scene, and then suddenly he starts talking about a girl; or he's talking about studying in order to impress a girl, but then he starts to realize the studying isn't making him better!. something like that!.Www@QuestionHome@Com

When the poem makes you jump as if shocked while reading, that's the major shift!. When you stop just to scratch your head, that's symbolism!.Www@QuestionHome@Com
