I'm going to guess that you sweat a lot when you play, and the salt from your perspiration is leaching into the strings, oxidizing them and giving them some organic matter that can decay.

You should definitely wipe down your instrument after every use, and consider using a silicone lube spray on the fretboard to protect it. Changing strings more often is also an idea.

Another reason could be the metal the strings are made out of. They could rust easily or maybe they are old. I suggest getting new ones.

I've been playing for over thirty five years and this is the first time that I've heard this one !!!! Do you wipe your strings down with a soft dry cloth when your done playing.......if you eat a lot of garlic maybe it's coming out in your perspiration....maybe this is why sometimes they stink and sometimes they don't maybe it's from what your eating and it's coming out in your sweat !!!!!!! Don't laugh, it's possible !!!!!!!!! I had to think about this one long and hard !!!!!!

I have played guitar for 67 years and i would suggest getting new strings if you are talking about sound and if you are talking about smell it is probally your sweat.
