Good question!.

The Anti-Federalists, such as Jefferson, were mainly located in the South where agriculture has always been a major way of life!. He also pictured the average American as a small subsistence farmer as many were in the day!. There really isn't a logical answer to this question, just Jefferson's preference; he viewed America as a country of farmers!.Www@QuestionHome@Com

I've never seen anything written about this!. But I have toured Monticello, his home!. He had a beautiful vegetable garden where he grew heirloom varieties and experimented with crossing varieties!. I think it was a personal interest of his!. I don't think they knew at that time what effect hybridization and other effects of commercial agriculture would arise!.

Aside from that he probably did observe that someone had to grow the food we eat or there wouold not be enough for people to be healthy!.Www@QuestionHome@Com

Probably because it's the leading source of food production for humans!. In his time there was far more land to farm and grow food, and it was also back then the #1 source of food production!.
