Of course it should be celebrated

After all, without Sobieski the Turks would have captured all of Europe (and they got as fas as Regensburg before the Polish cavalry caught them).
Just imagine- no bikinis on the beaches... (shudder)

As to Poland being owed a debt of gratitude- we know that the debt is due, for that time and for many others. However, being realists - we don't hold our (collective) breath waiting for the payment...

I think "saviour of Europe" takes it a bit far, after all, he wasn't all alone, but a little commemoration sounds like a pretty good idea!
