Most immigrants with the name were either British/Jamaican, Russian or German. I can't speak for the Brits with the name, because I have a feeling there isn't a single unified meaning to the name in Britain. But in Yiddish/Hebrew Hyatt is a variant spelling of the name given name Chait. It's much like the difference in spelling between Chanukkah and Hannukah.
