With the numerous takeovers of the country, a great number of Germans moved to regions of Poland to farm. Also the policies of religious freedom, brought many Jews and Catholics and Protestants who were fleeing areas of religious persecution.
The mix of Poland is mostly Polish.

The amount of political unrest, and the changes forced on their society was huge as new leaders assumed control and the country was divided, united, partitioned, disappeared, and united in new forms. There are numerous histories and I have to advise reading them, as it is so complex that it is hard to fathom how difficult it can be to find information, until you realize that the reasons that caused it. For example there were huge changes nearly every 10 years from 1840 on - this meant migration of people fleeing war or new rules, new rules of registration, and lots of destruction.

For American research, there are groups such as "Germans from Russia" that migrated to Poland and Russia and then to the US.
