According to a handy book called Family Names in Australia and New Zealand by Kenneth Allen, Lever is derived from the old French word Levre meaning hare. It was given as a nickname for a swift runner sometime in the 13th century.

The suffix son in an English name indicates that the person is the son of the person in the prefix. Johnson is the son of John and Thompson is the son of Tom or Thomas. Similarly, Leverson is the son of a hare or fast runner.
