Does anyone have experience merging old family photos and family history?

I am minimizing photos (no one need 36 pictures of any birthday party) down to representative photos , birth to death of a person.
If you have done this I would love some input on the texting and how you do it and pull your albums together.

I have a great deal of family history back to the late 1700's .

Sounds like you have a very large project on your hands, but that you enjoy it. This is more than my experience with actual albums. My preferred method is to scan the photos, all of them, and store them in a directory for each person. Electronic storage is so cheap. When scanning, you can scan multiple photos on each scan. When you save the file, give it an appropriate name answering who and when, like "Me_Nov-28-2006.jpg"

After you put that together, you can make a DVD for each member of the family you intend to pass it down to. This also facilitates using the pictures in a Family Tree program, something else you can pass down.
