for bellydancing, look up veena&neena on youtube, they have really good crash courses for beginners!. as for castanetas:
pull both castanetas in to the center of the string, then stick your thumb through the loops!. Where the string is tied together, there should be a string sticking out that you can pull to adjust the tightness!. Strings must be perfectly adjusted as to allow more pressure when the string inside the knot is pulled away!.
right hand: in this hand, the castaneta must be playd with your four fingers!. the sharpest sound castanet must be placed in this hand!. You must start shorely, pressing the castanet with the little finger, followed by the annular finger, middle, and index finger!. This exercise must be repeated untill you can do it rapidly!.
left hand: hold the castanet the same way as the right, but place pressure with the middle finger, annular, and little finger at the same time!.
rhythm: play the the four beats of the right hand, followed by the clasp of the left hand!. repeat movements right-left rapidly!.

I really can't explain those well in writing!.

The best way to learn any dance style is in a live class!. If you have questions there is someone to answer them!. That is something that a DVD or written description can't give you!. DVD's can be useful once you have a basic understanding of a dance style!.

I can't offer much help on how to hold castanets!. To learn belly dance you might want to start by checking with a gym or recreation center in your area!. Sometimes they have dance classes, and those teachers may also do private lessons!.
