Most people who learn from themselves do it by arching their neck away from where their body is facing. It's only natural. But when taking Capoeira lessons, we learned how to do handstands with our head and neck linear to the rest of our body. It's supposedly better to balance that way. I'm sure gymnastics and other things like that do it also.

Technicality calls for you to do it with the neck and back in alignment, however, handstands usually lead to more contortion based moves (limbers, walkovers), which requires the arch in the back, so a lot of us (dancers and gymnasts) almost do the arch automatically. However, I know that when I spot kids learning them, I make them stay straight, untl they start learning those moves.
