If you want to go for classic Valentine's Day, then I'd say go for a cute, shortish pink or red dress.
A way to stand out and keep with the theme: A bold black and white dress with red, pink, or purple accessories can be great. We had a pirate-themed dance this fall, and everyone had red and black dresses with cut-off looking hems. I wore a short, black and white dress with bright red accessories and stood out but still looked themey.
You could also try some sort of purple or winish burgundy color. It's still a Valentine's Day color, but less common, I'd think, then red or pink.
