I've read about his work and contributions to child psychology, but how were his works influential in education?

In my experience, he was influential in chemical education. He held that a young person could learn a new thing so long as the young person had a concrete concept to grasp. This seemed to indicate that a teacher deriving equations on a blackboard could not help. The student had to be shown in a way that was cogent to his experience.
