In writing. Do you have to always do the he said or she said after a quote.?

Like this.
"Once apone a time she looked good" he said.
"Are you sure?" He asked.

If I all ready develped the diologe and who was saying what is it gramaticly correct to leave out the he said, he asked stuff?

Not sure you all understood. I know you can differnt words and such. But in an established Diologue can i just go from quote to a nother. For example lets say its a well established diolouge can i just go
"Once apon a time she was hot"
"yea she was"

If the dialogue is set out like you have done then no, but it does need to be clear who the talkers are. You can add extra information about the character or setting though by putting something after the dialogue.

'I was looking at the young girl in the photo when Cameron walked in, taking it from me he smiled;
"Once upon a time she looked good..." I said.
"Are you sure?" he replied, that irksome smile of his once again full of inuendo...
(and so forth).'
