Well, there are two modes in writing: verse and prose. Poetry can be written as prose (often called prose poems), but its usually written in verse. The difference between verse and prose is that verse is metered language and prose is unmetered language. A meter in language is a particular verse foot (iambs, anapests, and so on...) A great reference for this information is Lewis Turco's "The New Book of Forms" which goes over the various history and many forms of versification. Its also reasonably priced.
