Well one qould be that fact that Edward is a vampire, and Bella is human, and her blonde is more potent to him and sweet smelling than anyother human in existance!.

Another one could be the fact that he loves her and if he wasnt paying enought attention in just a second he could simple reach out to touch her face and crush her skull!. or humans are not allowed to know about vampires, but he wants her to know him and doesnt want to lie!.
