There are a lot of authors who write this type of book!.

Harry Turtledove - Videssos, Krispos, Darkness and many other series to cover several different fantasy worlds!.
SM Stirling - Draka, Fifth Milennium and many other series
David Weber & John Ringo - Empire of Man, Oath of Swords, and many others
Eric Flint - Belisarius and many other series
George RR Martin - Song of Fire and Ice series

Eragon by Christopher Paolini has a lot of fighting!. There are going to be four books, and three are out right now!.
Harry Potter also has a lot of fighting!.
I hear that The Lord of the Rings is also very good, and has a lot of fighting, but I've not read it (though I plan to!)!.Www@QuestionHome@Com

Robert Jordan's A Wheel of Time series is AMAZING!. Exactly what you're looking for!. 11(soon to be twelve books) which are all at least 500 pages!.
