Best Answer - Chosen by Asker:
In addition to what Joz said, there are also the Three Act outline!.

This one is very basic: The Beginning, The Middle and The End
It seems simple and self explanatory, but you'll find that many novels are written following this outline!.

Another on is The Hero's Journey:
ACT I DEPARTURE, SEPARATION

1!. Ordinary World

2!. Call to Adventure

3!. Refusal of the Call

4!. Meeting with the Mentor

5!. Crossing First Threshold

ACT II DESCENT, INITIATION, PENETRATION

6!. Tests, Allies & Enemies

7!. Approach to Inmost Cave

8!. The Ordeal

9!. Reward (Seizing the Sword)

ACT III RETURN

10!. Road Back

11!. Resurrection

12!. Return with Elixir

Star Wars is one example of the Hero's Journey!.
As you can see, this still follows the Three Act outline!.

There's a plot diagram!. (Exposition, Rising Action, Climax, Falling Action and Resolution!.) But many fantasy books don't follow this!.
