I like DK they're laid out really well and it's accessible to the layman even the really complex theories!. I bought a set for my little sister who's 10 and she loves them!.

Usbourne do some good encyclopaedias as well!.Www@QuestionHome@Com

Encyclopedia Britannica gets my vote if you've access to the complete micro and macro set: breadth, depth, references for additional sources, longest and best reputation!.

I've not used them since they moved into the electronic age, but you can get a 30-day free trial here to check them out!.
