She's leaving her position to pursue her interest in a different industry!. I really want to get her a present and is thinking of a book!. I would think a very interesting coffee table(big book with lots of full page pictures) book would be good although, they can be pricey!. I would not give a motivational book but if you know her sense of humor maybe a humorous book!. If you are going to give a gift certificate, I recommend one to a spa for a massage!!!
