All the pigments used in watercolour paint have specific properties depending on their chemistry. Some pigments are opaque (because of their large molecular structure - picture 20 basketballs on your bathroom floor - can't see the floor beneath) some are transparent (small molecules - twenty tennis balls and you can still see the floor between the balls).

Some paints stain the paper and cannot be removed ( best example are phthalocyanine based pigments) and some are non-staining (many of the earth colours do not stain). Staining colours can be painted over with another colour, and the one beneath will not move or mix with the 2nd colour. Non-staining colours can be "lifted" with a wet brush or sponge to reveal what is beneath.
