Half the time and absolutely not
Its easier to start when you have the inspirational part of the creativity, then when the ego sets in if you are afraid people will define you by your work and you are not confident in it then you can fall in the trap of disinterest.

I am an artist and a Graphic Designer, usually when I started something, I never finish it, and if I do, I don't find it interesting anymore.

it depends on what it is.
if it something i truly put my heart into then i always finish it
if i don't then i usually crumple it up and bin it

nearly always unsatisfied because i get the feeling i could have done better

As someone who has been an artist within various media and fields I feel that I can answer this question pretty well.
First I'll tell you the arts that I have been and still am involved with are: Painting, Photography, Music, Literature and various other mixed media. As for being happy with the end result, not too often. I always seem to find a little something that I could have seen/heard differently. It's the artist's mind, you are never fully satisfied with your work, any of it, there are always flaws that you can see. In visual arts, we strive for perfection and rarely achieve that end.
Most of those flaws though, are only seen by us, and if you keep quiet about it, you will learn from it. Do it a little differently the next time.
It's that sense of accomplishment that we try to achieve in all our work. We seek acceptance from within and without.
That's why you said you wanted answers from REAL artists.

Well, at first I will be satisfied with it but after a couple of days I start to dislike it and after a week or so I hate it. I don't know why but the longer it has been since I have done it, the more I hate it. I just think that I can do better I guess. Most of the time I finish what I start though, unless I didn't like it from the start.

Satisfied? - maybe, but always aware that I could have done it better, or differently, as in life.
Finish what I start? - almost always, whether I like it or not, as I do with other things (books, films, etc.).
But everyone is their own person - there is no right way to live your life.
