i can explain it in photoshop and you can see if you can do it on gimp.
Easiest way is to make a duplicate.
In photoshop you would make a second layer.
Then convert the top one to black and white.
Then erase anything on the top layer that you want in color.

This is done very easily with Photoshop, which is the only program I have used, so far. The first one is definitely done with different layers in Photoshop, just putting the layers of the picture of the sky/clouds/fields over the "reflections" of the glass lenses. The second one could have been done that way, or, if the suitcase was really that color red, a Quick Mask to make everything else white and black, leaving simply that one spot of color. This is how they make pictures of, for example, a glass of water with a rose in it, and the rose is bright red, but everything else is shades of black and white.
As for whether you can use Gimp- I don't know. I haven't ever used that program. And the only reason I'm using/have used Photoshop is because it's installed on the university computers =)

the first one is two photographs combined together with photoshop. the second is created with layers... the bag would be cut out and on it's own layer in full colour. everything else is desaturated.

I'm going to reference the sunglasses images as an example as if I were actually using this in GIMP.

1) Open the image in GIMP.
2) Then go to Layer and choose Duplicate Layer. You now have two copies of the same image, one on top of the other.
3) Manipulate the top photo by using the desaturation tool.
4) Once you have the image the shade of black and white that you want you can use the wand or "fuzzy" tool to select the glasses. You may be able to select the entire glass for each eye and delete it. This way the bottom colored image comes through just in the portion of the lenses.

If the wand or fuzzy tool doesn't capture the entire lens I can only suggest to keep at it in smaller portions. You also have the eraser tool to assist you.
