I think "Olivia Herbst" brings to mind olives and herbs!. Or the old maid librarian!.

Why Olivia Herbst!? Surely you can find a name that rolls off the tongue and has a pleasant ring to it!.

If it is for a stage name, you won't need one unless you just want it or your real name is taken by another union member!. I would change the herbst to Hearst or Herst, since they are pronounced the same and it helps to avoid confusion!. Think carefully on stage names!.
