Oh theatre journals are one of those things that you can go all artsy and abstract with! Write out a few things your experience in class for the week or day made you feel or discover and try and think of what kind of images they invoke. Or how you would give a pictorial representation to a feeling.

A thing I loved to put in my journals were quotes. Start your quote hunt now and compile a word file or a big book of them and than you can go through that and choose a quote that kind of invokes the spirit of your week.
You could even do the same for images, create an image bank with cool pics and graphics that you really like and add them to your journal when they fit.

The best thing about most drama teachers is they are kinda hippy-artsy-feeling type people so you don't need to go into analysis about why you put something in your journal. (And honestly the fact that you're even doing your homework is impressive for most drama teachers who have to deal with people taking the class for "easy credit".)
