Question: Poetry Question !.!.!. Is this a correct example of anastrophe!?

I have to write a poem and include an example of anastrophe in it!.!.!. Is the following sentence a correct way of using the poetic device!?

"But my time it was not"

Anastrophe is a reversal of word order for poetic effect!.!.!.so yes, your example is an anastrophe since the normal word order would have been "but it was not my time"!. It sounds silly, but if you want a little trick to form anastrophes, just think how Yoda would have said it!. :)
