Most ska harmonies aren't very complex; ska is derived from reggae, which is very much folk-music derived (i.e. simple melodies and harmonies easy to play on the guitar while singing.)

So in doing a ska arrangement, closed-voice harmonies of major, minor, or seventh chords (whatever best fits the song) would be most appropriate. The biggest challenge in playing ska would be the rhythms- lots of syncopations and off beats (so the musicians have to be very good at counting and playing in a steady tempo without having a strong meter to keep them in time.)
