acousticfingerstyle.com has some challenging and beautiful guitar arrangements. Also, making a trip to your local music store and looking for books of fingerstyle Christmas tunes can actually prove fantastic results. I found two wonderful books filled with challenging and interesting solo acoustic guitar music. Usually they are fully written out (IE. not a fake book), so there's little guess work. Best of luck.
