Plastic mouthpieces are for beginners. They are cost effective, and at least it's something to play on, for all woodwinds. However, once you are professional, you want to buy a mouthpiece that is a good quality, and that is the same material that a professional instrument is made of. An example is Professional Clarinets. Pro brands are made of wood, and wood mouthpieces conjoin nicely with them. Saxes are made of metal, so the mouthpieces should be metal.

In the end, A metal mouthpiece will give you an instantly harsher tone. When you adjust to it you will get a much better sound and be able to lay down some funky stuff. You can reach higher highs and lower lows. Its just the natural move. You will know its time to change when you outgrow your plastic one.

Metal mouthpieces are generally for jazz players, though some classical players have used them. Plastic is OK, but the best mouthpieces are made of hard rubber which can give a smoother tone.
