The 1800's were when romantic symphonic music was at its height! (Beethoven, Brahms, Berlioz, Wagner, etc.!)

Until the 19th century, smaller ensembles and smaller-scale musical works were much more prevalent.

Minstrels were way earlier- 1200's?
Brass bands could be any time period, but they certainly were not important historically or musically during the 19th century.
Jazz really only started in the very late 1800's, but really didn't take off until the early 20th century.
