Programs to create midis with different instruments?

I've heard about free programs on the interent to create your own Midi files(and that they can immitate different instrument?), can these be used if for accompaniment? where can they be found? and if you use these programs can the songs/files be saved on a CD?

I don't know if I would recommend them for an accompaniment if you are using it professionally, like for a festival solo/ensemble type event. Just for practice though, it should work out fine. You should be able to burn the midis to a CD, I think.
