A Saturn V!. The Saturn V is the rocket that carried the Apollo missions that landed on the moon to the moon!. I'm suggesting it as a symbol that represents JFK because of one of his speeches:

"We choose to go to the Moon in this decade and do the other things, not because they are easy, but because they are hard!."

Apollo 11 did land on the moon in 1969, fulfilling JFK's pledge!.

Another symbol of JFK would be the eternal flame at Arlington National Cemetery, which is a part of his grave site!.

Then there's using a picture of a PT Boat and a coconut!. The PT Boat, especially if it's PT-109, represents JFK's time in the Navy during WWII where he was the captain of PT-109!. The coconut is representative of he and his crew being stranded on an island after a Japanses detroyer sank PT-109!. Native scouts found the survivors and Kennedy sent the scouts back with a message scrolled on the coconut!.
