They spoke latin and some spoke greek.

Latin and Greek for those Roman Citizens who were residing near or around Rome. However, remember when Rome conquered other countries they technically became Roman Citizens so they might also speak Germanic or some other local language.

Any educated Roman learned Greek as well as his own language,Latin. A Roman might also learn a local language of a province he was serving in such as Aramaic in Syria
