Very unlike modern music as the chromatic scale we use (12 tones within the octave, all a half-step apart) did not exist at that time. The notes covered the human voice natural scale, the old eastern European songs with a little wailing in them are still close to the medieval songs. That's the best I can come up with as description.
There's plenty of medieval groups now, many who recorded songs, especially in Europe where Middle Age is fashionable now. It is possible to buy the CDs on the net.

That is really a very difficult question to answer because how can you describe what something sounds like? The best thing would be to find some medieval music to listen to. You might see if you can find a recording of the Medieval Babes for instance, they are very good. And there are lots of recordings of Gregorian chants and things like that. The medieval era produced wonderful church music and secular music as well, but you really need to listen to it for yourself.
