I have just found a site through the German Information Center
that I have used to email Germany and get another two generations on a friend's chart. Once you get there, there are other items (newsletters, etc.) available

Your question isn't totally clear. Are you looking for research guidance/ networking, or to hire a professional?
www.rootsweb.com maintains many email based lists, including most parts of the world. Click on mailing lists, on the front page.
This is not necessarily professionals. Most times, these will be persons like yourself, looking for resources or information. They will not always even live in the area. However, it is possible someone can direct you to archives in these localities (archives don't always provide research services).
Another alternative are dropping by an LDS family history center, to go through their catalog. You can thus figure out what kinds of records they have on microfilm, and which may be useful to you.
