I know that It says Ike Gelbert, his wife Sarah and his Bakery but I can't make out anything else.

It's not your computer screen being bad, it's the fact that the World War I draft cards are so old that they are naturally hard to read. :) Anyway, it says:

I don't think it says Manhattan though although it does finish with a "ton" on the address line.
I think Wendy C is spot on with her answer, I got the magnifying glass out and had a really close look.

Ike lived at 1626 Lexington Ave, New york,
date of birth is July 16, 1878 (he was 40 yrs old)
he is white, and naturalized citizen, works as a baker at (pichter?) brothers on 69 East 109th st in Ny city
Sarah Gelbert at same address is next of kin
He was medium weight and build, with dark brown hair.. cannot read the eye color.
