If you know your grandfather's name, you can find him on the Social Security Death index. That's a free search. It will tell you his year of birth and what state issued him his social security number. He could have been a young man when they started using Social Security numbers but at least it will give you some clues. It will also tell the state of his death.

Also, familysearch.org
rootsweb.com

You might also need to order your parent's birth certificate if your dad refuses to give even the man's name. I don't think having a copy of your dad's birth certificate is barred because he is your parent.

Off the top.. to be "100% Polish" means that both your parents (and grandparents) were all born in Poland. You should be able to know that, fairly simply.
Finding your history is something that REQUIRES building from yourself, backwards. Most reputable genealogy sites do not include living persons, for many reasons. Privacy is the main one.
The "standard" for starting out, is asking your parents. In your case, your dad seems to have a reason that he prefers to not discuss it. That's hard to accept sometimes, but the truth is that families are not all perfect, and we can't always know why, immediately. I know it might be hard, but I can't judge why dad feels that way... but it probably is important to respect his decision.
edit-
the suggestion that you order your father's birth certificate without his consent or knowledge, is completely unethical.

Today, most states have different laws regarding who can and who cannot order a birth certificate. There is a big risk of identity theft and states have clamped down.
