Your dad's cousins children would be your second cousins because you share a set of great grandparents. Your dads cousin would be your first cousin once removed.

Figuring out the degree of cousinship is easy
If you share a set of grandparents, you are 1st cousins
If you share a set of g grandparents, you are 2nd cousins
If you share a set of gg grandparents, you are 3rd cousins, etc.

Many people let the "once removed" and "twice removed" thing mess them up. It is simply the number of generations difference there is from the original degree of cousinship. For example, in the case of your dads first cousin and you. Your dads cousin shares a set of grandparents with your dad; however, his grandparents are your great grandparents --- one generation difference, thus explaining once removed.

Your father's first cousin is YOUR first cousin once removed. His/her children would be your second cousin. GGGSon1 - GGGSon2

All offspring ending with 1 are descendents of Son.
All offspring ending with 2 are descendents of Daughter.

Son and Daughter are siblings.
GSon1 and GSon2 are 1st cousins.
GSon1 and GGSon2 are 1st cousins, once removed
G-Son1 and GGGSon2 are 1st cousins twice removed
GGSon1 and GSon2 are 1st cousins, once removedc
GGSon1 and GGSon2 are 2nd cousins
GGSon1 and GGGSon2 are 2nd cousins once removed
GGGSon1 and GSon2 are 1st cousins, twice removed
GGGSon1 and GGSon2 are 2nd cousins, once removed.

If you are talking about the children of your father's first cousin, then they would be your second cousin as you are in the same generation coming down from a common ancestor. If you are in a different generation coming down from a common ancestor that is where the"removes" come in.

For instance you are a first cousin once removed to your father's first cousin. You are one generation removed from him coming down from a common ancestor.
