Question:Is my father's brother's grandchild (my cousin's child) considered my first cousin, once removed?
Am I merely considered his grandfather's nephew or is there a more specific kinship term for him to describe me with?

Benthebus is right on the mark. You are first cousins, once removed. Some families might still refer to someone as aunty or uncle in that situation, just the way a close family friend sometimes earns that honor. But there's no kinship term that's more specific for it. You're simply cousins.

Would that not be considered a second cousin?

Once removed, the common ancestor is your grandparents and your cousins child is once removed from them.

Second cousins would share great grandparents and so on.
