Work it out generation by generation, one line at a time. Call your sister Elizabeth and your daughter Jane:

Jopet & Elizabeth = siblings
Jane & Elissa = 1st cousins
John & Eloise = 2nd cousins

Your niece is Elissa.
Elissa is your daughter's first cousin.
Elissa's daughter Eloise is Jane's first cousin once removed because she is down one level from Jane.
When your daughter Jane has a child, the child and Eloise will be second cousins.

Cousin in the 2nd degree.

Their relationship would be "1st cousin once removed".

To determine any relationship between two people, determine the ancestor line for each back to a common ancestor. In this case, the two lines are:

Line A: Daughter – You – Your Parents
Line B: Child – Niece – Your Brother/Sister – Your Parents

Now figure out how many generations are SEPARATING each person from the common ancestor. In this case

Line A: 1 generation (you) separating person from common relative.
Line B: 2 generations separating person from common relative.

The SMALLEST of these two number is the “cousin number”. In this case, 1 is smallest so the two people are first cousins.

The “removed number” is the DIFFERENCE between these numbers. In this case, 2 – 1 = 1 which is once removed.

So the two people are 1st cousins once removed.

And this works for EVERYONE, because there is actually a 0th cousin, but we have specific “titles” for 0th cousins.

0th cousins are Brothers and Sisters
0th cousins once removed are Father/Mother, Son/Daughter, Aunt/Uncle, Nieces/Nephews

for 0th cousin twice removed, just add “Grand” to the once removed titles

for 0th cousin three times removed, just add “Great-Grand” to the once removed titles, etc.

Your daughter and your niece are 1st cousins, your daughter and your niece's child are 1st cousins once removed (one generation removed).

Your daughter's child and the niece's child would be 2nd cousins.
