Your question asks for much more than most people are willing to research for one question. You obviously also have some genealogy data and knowledge, probably more than most of the answerers in this category (at least with your own Surname and variants). All that I can do for you is to provide some sites that may give you more information than you have.

LDS Family Search has more than 25 pedigree files, and numerous entries that are prior to 1790. That site uses a Soundex calculator but shows the variants it comes up with. You really should go there, for one.

Do you use GENFORUM? Below is one for with the search for surname completed, and posted here, and the other site is where you enter the surname to find if there are any Forums for that name. Each variant may have it's own site, and each site may have answers for you either waiting, or you can post specific questions.

For the Ellis Island site, there were 36 Exact matches for Zellmer, and you can increase the variants by selecting a 'view' option at the top (after the first search), you may want to register there to have total viewing freedom, it is free.

Hope these help you in your search.
