Best Answer - Chosen by Asker: There is a book at the Indiana State Library in Indianapolis that gives a history of Inn keeping from the frontier period to 1880s in the Midwest. I read it but do not remember its name. It is very good, well researched and full of information taken from period sources as Letters, Journals and Newspapers. Your local Li bray can get on the Indiana State Library web site. access their catalog to locate it or ask the staff to find it and borrow it for you on Inter library Loan. Indiana State Library does not charge a ILL fee but you library may have processing fee and postal costs.
