How many are there currently, or how many were there total!?

Many forms of swing dancing have come and gone, but the most famous that can still be found today are:

Charleston (this is the grandfather of all swing dances)
Lindy Hop (this is the father of all swing dances)
East Coast Swing
West Coast Swing
Collegiate Shag
St!. Louis Shag
Carolina Shag
Balboa
Jive or Ceroc (European Dance)
Boogie Woogie (European Dance)
Acrobatic Rock n' Roll (European Dance)
Blues Dancing

All of these dances are just different names for East Coast Swing, regardless of what anyone might tell you:
Jitterbug, Rock n' Roll, Rockabilly, and "The Swing"

Other dances that have come and gone that are part of the swing family:

Cake Walk
Black Bottom
Flea Hop
Eastern Swing
Western Swing (before "Country and Western Music")
Imperial Swing
Skip Jive
Push or Whip
Apache
Randy Swing

(just to name a few)
There are probably many many many more, as before Film and Television, each local community might have their own unique dance that was done to jazz music!. So people living in New York, dance differently than people in Chicago, who were also dancing differently than people in Los Angeles!.
