i love doing that!
little kids you can make little games where you have cards of animals and other objecst and the kids will pretend to be the object or animal of the card you hold up by dancing and moving all around the room.
older kids ;you can do a trivia game where you say the name of a dance step (do this on teams) each team sends up someone who can do the step and if they are the first team to do it right they get a point just try to be sure everyone gets a chance to try the step.
for tap have all the kids close their eyes and have one kid go up and do a step then the other kids guess what the step was from what they heard you should accept some thing like Nifty or flap heel heel spank heel step heel because they are the same

alll kids when the need to improve on something give little rewards like those star dancer ribbons when they get it

good luck
getting to know each other and getting the boys and//or girls to work as a team that always helps (btw it can also cause fights)
